Happy Fried Chicken Day!

It’s National Fried Chicken Day! Here’s a great way to enjoy your fried chicken with a twist. This time, the chicken will be done on a barbeque. Yes, you have read it right! It’s BBQ Fried Chicken, it is possible and tastes amazing!

Try it! You will never look at your BBQ and fried chicken the same way again!

Makes 4 servings of BBQ Fried Chicken

For the marinade:

  • 2 large Chicken Breasts
  • 1/2 cup Greek Yogurt
  • 2 tbsp Almond Milk- if you don’t have it in the house use regular milk
  • 1/2 tbsp Chili Powder
  • 1/4 tsp Cayenne

For the bread crumbs:

  • 1 cup Panko Bread Crumbs
  • 2 tbsp Dried Oregano
  • 1 tsp Garlic Powder
  • 1/2 tsp Chili Powder
  • 1 tsp Salt
  • 1/4 tsp Pepper

For the BBQ:

  • 1 tbsp Olive Oil

If you want, you can marinate the chicken in advance. It can be done overnight which is even better. In a Ziploc bag, place the Greek yogurt, almond milk, chilli and cayenne squish and mix together, set aside. Wash chicken in cold water and pat dry with paper towels. Place the chicken on a cutting board then cut each chicken breast in half. The halves don’t need to look the same just make sure each half is about the same density so they all cook perfectly. Now drop the 4 chicken breast pieces into the bag of marinade and squish and mix together until the chicken is coated. Place in the fridge for 2 hours minimum, overnight is even better.

Now, it’s time to make the breadcrumbs. If you are preparing all this the night before or the morning before, put all the breadcrumbs in a bag and set aside. This way, it is ready when you get home from work. If not, then assemble the breadcrumb mixture in a pie pan or a shallow bowl, just mix the Panko and all the spices together. Remove each chicken piece individually from the bag shaking off any excess marinade and move to the breadcrumbs, roll in the breadcrumb mixture until all covered. Hold it over pie pan to shake off any excess. Then, move to a plate and move on to the next until you are all done.

Heat your pan to medium low and put the chicken. Let the bread crumbs turn to slightly golden brown. Then, remove the chicken from the pan. Now, heat your grill to medium low. Brush the grill with olive oil. Grill the chicken for about 20-25 minutes until golden brown.
